COOKING METHOD

    1. In 12 cups of boiling water add hooves, 2 tbsp Aasan Paya Mix, half sliced onion, ginger and garlic paste. Cover and cook on low heat until the hooves are tender (goat/lamb 3-4 hours, cow 4-6 hours).
    2. Separately heat oil/ghee and fry remaining onion until golden. Add remaining Aasan Paya Mix and yogurt. Stir fry for few minutes and pour in the Paya Curry.
    3. Cover and simmer on low heat for 30-45 minutes.
    4. Sprinkle Aasan Garam Masala Powder (optional) and garnish with green coriander, green chillies and ginger shreds.
    5. Serve with hot naan.

Note: For a better taste, before following step 1, boil hooves in water for 15 minutes, throw water and go to step 1.
