COOKING METHOD

  1. Heat 1 cup oil, add ginger, garlic paste and meat fry for a minute, add Aasan Nihari Mix. Stir fry for 5 minutes.
  2. Add 8-9 glasses of water and bones (for Chicken 3-4 glasses). Stir and bring to boil. Cover and cook undisturbed on low heat (for: Beef 6 hours, Goat / Lamb 4 hours, Chicken 1 hours).
  3. Remove bones, collect marrow and discard bones. Add marrow to gravy.
  4. Gradually add dissolved flour in the gravy. Stir and mix. Bring to boil and cook for 15 minutes. Stir occasionally.
  5. Heat remaining oil and add sliced onion. Stir fry until golden and pour into Nihari. Cover and simmer for 10 minutes on low heat.
  6. Remove excessive oil before serving, if desired.
  7. Garnish with finely chopped green chilies, ginger Julienne and lemon for taste. Serve hot with naan.

Onion finely sliced 1 medium
Ginger Paste 1 tablespoon
